Kid-Friendly Cold Pasta Salad Recipe

If your kids like pasta, why not try upping the nutrition factor with a variety of kid-friendly vegetables? You can mix and match the vegetables your kids prefer, or introduce new ones. Mixing vegetables with a food they already like is a great way to encourage kids to taste new vegetables. This is also a great option for school lunches!

Ingredients

  • 1 cup whole grain macaroni pasta
  • ½ cup frozen mixed veggie medley (peas, carrots, corn)
  • Broccoli (frozen or canned)
  • Cherry tomatoes
  • Homemade vinaigrette
    • 2 Tbsp olive oil
    • 1 tsp oregano leaves
    • 1 Tbsp lemon juice

Steps

  1. Boil pasta and cool under water, then drain
  2. Boil veggie medley and broccoli and cool under water, then drain
  3. Mix lemon juice, oil, and oregano in bowl or cup
  4. Combine pasta and vegetables in a bowl
  5. Drizzle vinaigrette over and toss
