Kid-Friendly Cold Pasta Salad Recipe
If your kids like pasta, why not try upping the nutrition factor with a variety of kid-friendly vegetables? You can mix and match the vegetables your kids prefer, or introduce new ones. Mixing vegetables with a food they already like is a great way to encourage kids to taste new vegetables. This is also a great option for school lunches!
Ingredients
- 1 cup whole grain macaroni pasta
- ½ cup frozen mixed veggie medley (peas, carrots, corn)
- Broccoli (frozen or canned)
- Cherry tomatoes
- Homemade vinaigrette
- 2 Tbsp olive oil
- 1 tsp oregano leaves
- 1 Tbsp lemon juice
Steps
- Boil pasta and cool under water, then drain
- Boil veggie medley and broccoli and cool under water, then drain
- Mix lemon juice, oil, and oregano in bowl or cup
- Combine pasta and vegetables in a bowl
- Drizzle vinaigrette over and toss
